I think I've finally found it. YUMMMM!

INGREDIENTS:
1/2 cup butter
1/4 cup shortening
1/3 cup unsweetened cocoa
powder
2 cups confectioners' sugar
2 tablespoons milk
1 cup hot fudge topping (NOT heated)
1 teaspoon vanilla extract

DIRECTIONS:
1. Cream together the butter or margarine with the shortening.
2. Sift the cocoa with the confectioners' sugar and add to the creamed mixture. Mix together adding 1 tablespoon at a time of milk to keep mixture smooth. Don't add more than 1/4 cup of milk.
3. Add the hot fudge topping and the vanilla extract. While mixer is running, gradually add water and knead on low speed (this is where I switched to the hook) until dough is firm and smooth, about ten minutes. Turn machine off.

Pour oil down inside of bowl. Turn on low once more for 15 seconds to coat inside of bowl and all surfaces of dough with the oil. Cover bowl with plastic wrap. Let rise in warm spot until doubled in bulk, about two hours.

Preheat your oven to highest setting, 500° or 550°F. If using a pizza stone, place stone in oven on bottom rack, preheat oven one hour ahead. Punch dough down, cut in half. On generously floured work surface, place one half of dough.

By hand, form dough loosely into a ball, stretch into a circle. Using a floured rolling pin, roll dough into large circle until very thin. Don't worry if your circle isn't perfect and if you get a hole; just pinch edges back together.

To prevent dough from sticking to counter, turn dough over, add flour to dough, counter and rolling pin as needed. Sprinkle pizza peel or cookie sheet generously with cornmeal. Transfer dough to pizza peel or cookie sheet with no lip. Add toppings.

Slide dough onto pizza stone or place cookie sheet with pizza on bottom rack. Bake 10–12 minutes or until golden. To remove pizza from oven stone, slide cookie sheet under dough onto another cookie sheet, slice and serve immediately.

Roll out remaining dough and top with desired toppings or freeze in freezer bags.

Snickerdoodles

cindeelu

1/2 cup shortening
1/2 cup butter
1 1/2 cups white sugar
2 eggs
2 3/4 cups sifted all-purpose flour
1 tsp baking soda
2 tsp cream of tartar
1/2 tsp vanilla extract
2 tablespoons white sugar
2 teaspoons ground cinnamon

Preheat the oven to 375 degrees F (190 degrees C). Place a cookie sheet under 9x13 dish, as the syrup tends to run over the sides.

Pasta with Vodka Sauce and Sausage

BBKiddo

Feedback: I really liked it. If you use a rapid rise yeast, it cuts down on the raising time by almost half. The more the dough gets kneaded, the better the less chewy the final product. This is labor intensive if you don’t have a machine to do your kneading, but is totally worth it. So yummy!! I’ve also subbed whole wheat for some of the flour, but then it is good add a little extra yeast and/or let it rise a little longer.

Gingerbread Man Cookies

Zebe912

(adapted from a Peperidge Farm CopyCat Recipe)

<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />

1 cup packed dark brown sugar

¾ cup granulated sugar

½ cup shortening

¼ cup molasses

2 eggs

½ tsp vanilla

2 cups all purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp ground ginger

1 tsp salt

1 tsp ground cinnamon

¼ tsp ground cloves

Preheat oven to 300. Bake until cheese melts and chicken is tender, about 8 minutes.

My Aunt Karla’s Taco Salad

mrs.abybaby

1 lb hamburger (I use ground turkey)
1 can of kidney beans, drained
1 head of lettuce or 1 bag of shreds
8 oz. Anyone can enjoy!

Ingredients:
4 Scallions, coarsely chopped
Garlic--either roughly three cloves, finely chopped, or minced garlic, which you can buy from the store (my preference), roughly 1/2 tbs
1 tbs Crushed Toasted Sesame Seeds
3 tbs Soy Sauce
2 tsp Rice Wine (our preference) or Dry Sherry
1 tbs Sesame Oil
2 tbs Sugar
black pepper
1 1/4 pounds thinly sliced beef (max 1/4 inch thick). If that's not available at your market, filet mignon, sirloin or round steak, frozen for one hour.
Vegetable or Olive oil for brushing

1) Mix the scallions, garlic, sesame seeds, soy sauce, rice wine/sherry, sesame oil, sugar, 2 tbs water and black pepper to taste.

2) If you bought a thicker cut of beef, slice thinly, maximum 1/4 inch thickness. Having partially frozen the meat helps to cut the meat more accurately. Then cut into smaller individual pieces (usually a couple of inches long by an inch or so--a little bigger if grilling). Lay in a shallow dish (if you don't have one, a bowl works well, too--just mix it in) and pour the mixture over, marinating at least one hour.

3) Preheat the broiler or barbecue. Lightly oil the broiler rack or table-top grill plate. Cook the beef in batches in a single layer until browned on the outside. If using thicker pieces, a little pink on the inside is desirable.

Soy Honey Salmon

Choensa

This will convert anyone who doesn't like salmon very much into a believer!

Ingredients:
1 Scallion, Minced
2 tbs soy sauce (reduced-sodium soy sauce works well for those watching their salt intake)
1 tbs Rice Vinegar
1 tbs Honey
1 pound center-cut salmon fillet (what you find most commonly in the store), skinned and cut into ~4 portions
1 tsp toasted sesame seeds
Optional: 1 tsp minced fresh ginger

1) Combine the scallion, soy sauce, vinegar, honey and ginger (if you use it) in a bowl until the honey disolves. Place each skinned piece of salmon in either one large ziploc or in individual ziploc bags. If using one large bag, you'll put in roughly 3 tbs of the sauce. I usually put each one in a separate bag with about a spoonful of the sauce for each one, just to cover it and let it soak a little. Allow it to marinate in the fridge for 15 minutes.

*Tip: Place each piece skinned-side down in the bags so that you don't get confused which side is which when cooking.*

2) Preheat the broiler. Place each fillet skinned-side down on the pan, and put the pan in the broiler 4-6 inches from the top. Cooking time depends on the thickness of the fillets and your individual broiler, but 6-10 minutes is recommended. My broiler cooks it super fast since it is old.

3) When finished, drizzle some of the remaining sauce over the cooked fish and garnish with sesame seeds.

So yummy!

Turkey Wraps

cindy0682
1 package turkey cutlets (or chicken, up to u)
olive oil
BBQ sauce
roasted red peppers
lettuce
2 shallot chopped
1 tablespoon taco seasoning mis
cooking spray
avocados
wraps

Saute shallots in olive oil Add turkey cutlets. lightly brown both sides. spray the inside of the crock pot with cooking spray. add turkey, taco seasoning and BBQ sauce. stir and put on high for 3 hours. mash the avocados, chop the lettuce, slice the red peppers and put them all on plates. once the turkey is done, shred the turkey and put it back in the crock pot and stir is so that the sauce coats the turkey. open a tortilla wrap, spread the avocado, place the peppers and add the turkey ad lettuce. wrap it up and enjoy. it's REALLY REALLY YUMMY!!

Sweet Sour Chicken

bride 7-14-07

1 pkg. onion soup mix
½ jar Smuckers Apricot preserves
2 chicken, cut up
½ bottle Kraft Russian Dressing
¼ can frozen orange juice (optional)
(Do not mix with water!!)

Mix all of the above ingredients.
